Microwave tunnel SAIREM TMW 75

The French company SAIREM specializes in the production of batch and tunnel thawing machines using microwave or radio wave technology. The product can undergo the thawing process both without packaging and in cardboard or plastic film packaging. Radio waves are primarily designed for thawing products in uniform cubes, such as fish. Microwaves, on the other hand, are used for thawing irregularly shaped products. The thawing process from -20°C to -4°C / -2°C takes between 3 to 15 minutes.

The SAIREM TMW microwave tunnel enables rapid tempering or thawing of deeply frozen food. It is suitable for products such as red meat, poultry, fish, fruits, vegetables, cheese, butter, etc. A distinctive feature of TMW is the use of microwave technology to achieve optimal thawing while maintaining quality and uniformity with good microwave efficiency. The large microwave cavity size, length of microwave propagation, and cross-coupling of microwaves above and below the blocks are some examples of solutions applied to achieve the best performance and uniformity.

Performance

The TMW 75/150/225 microwave tunnels offer thawing efficiency ranging from 2 t/h to 3 t/h, from -20°C to a final temperature of -4°C / -2°C in 95% of the block. This temperature range is optimal for processing methods such as dicing, grinding, slicing, and cutting. The performance is calculated based on thawing blocks with standard dimensions of 600 mm x 400 mm x 200 mm and a weight of approximately 20/25 kg. If products with high fat content are to be processed, the fat should be evenly distributed within the block; otherwise, the temperature threshold for uniformity is -4°C. The tempering efficiency varies and depends on the desired final temperature and the type of product (meat, fish, vegetables, fruits, butter, etc.). The maximum microwave power that can be utilized for processing is limited by the products themselves, not by the tunnel. Thawing programs, i.e., power vs. time, must be selected to achieve a balance between efficiency and uniformity of thawing.
